The Bikini Cocktail

Serves 10 servings

To make the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

For the Premix (produces 850ml, serving 10)

400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

Making the Cordial: Put the listed components in a saucepan, bring to a gentle boil, stirring until the sugar dissolves. After that, take off the stove and leave to cool down entirely. Decant into a sterilised bottle, close it and store in the fridge, where it will keep for around a month.

For the Cocktail Base: Mix all the spirits and syrup in a big jug, leave to sit for one hour, then pass it through preferably using cheesecloth, so it's fully clarified.

To serve: Add 85ml of the cocktail base to a mixing glass filled with ice, and stir gently for about 60 seconds to chill. Strain into a frosted cocktail glass or similar, top with some cranberries adding the final touch with a light spray of mandarin oil over the drink.
